Fettuccine with raw ham are a tasty first dish of fresh homemade pasta, typical of our lands, a nutritious and complete first dish, especially rich in flavors.
Let's start with the ingredients, enough for four people.
We will prepare the pastry with 4 eggs, 400g of 00 flour, a spoonful of water if necessary.
For the dressing we will use 1 onion, 200g of high quality raw ham possibly cut into cubes, ½ glass of hot milk, ½ glass of tomato sauce, butter and pepper.

Place the flour on a cutting board and mix it with the whole eggs, egg yolks and whites, if the dough is too dry, add one or two tablespoons of water.
Roll out the dough until you get a thin sheet and place on a cotton cloth, let it rest for at least an hour.
Roll the dough, sprinkle it with flour, then start cutting our fettuccine, the average width is ½ centimeter.
Now let's dedicate ourselves to the sauce, in a large pan, over low heat, pass our onions, finely chopped, together with a knob of butter, when they are wilted, add the hot milk, cook until the sauce is thickened.
At this point, add the raw ham, brown everything and add the tomato puree, cook for a few more minutes until the sauce is reduced.
We boil the fettuccine in abundant boiling salted water, drain them and dip them in the pan with the sauce, we keep everything for a minute.
At this point we just have to plate up and serve at the table.
