The Coppa di Testa is the first of the sausages that is prepared during the processing of pork. Cooked-dough sausage consisting of the pulp of the pig's head, with the addition of spices and flavorings.
This salami requires a slow cooking of about 4 hours to keep its qualities unaltered.
It is eaten in slices that are not too thin, it appears pink and compact and is spicy and peppery.
