The rectangular-shaped lean bacon comes from the lean part of the pork belly.
When cut, it shows a perfect balance of lean and fat parts.
Gently spiced on the surface with natural aromas.
After the salting phase, the pancetta is left to dry for a few days with the heat of a real fireplace, which gives it a strong taste.
It is then transferred to special rooms for the maturation phase which lasts an average of 3-4 months. Time and the healthy air of our places do the rest.
