It is produced with a mixture of lean and fat parts mixed with salt and with specific spices. Then everything is stuffed into the intestine. After that the sausage is left to dry, to be enjoyed in various ways.
The grain of the grinding of the meat, the amount of salt, pepper and all the additional spices, together with the seasoning period, make the product unique. Changing even one of these elements gives a different result.
SEASONING: about 30 40 days.
